- 1 cup cherry tomatoes (halved)
- 1/4 red onion (finely minced)
- 2 tbsp parsley (minced)
- 75g Feta cheese (crumbled)
- 2 tsp olive oil
- 1 tsp Amboora Smoky Ras El Hanout Spice Blend
- 1/2 tsp salt
- 1/2 tsp black pepper
- Halve the cherry tomatoes, mince the onion and parsley.
- In a small bowl combine all ingredients and crumble feta cheese, mix well together.
- Add olive oil , Amboora Spice blend and salt.
- Taste to see if you want to add any additional salt or black pepper.
- Enjoy over omelettes, with bread, or as a side salad!
