Lemony Potato Salad

800g new potatoes
½ jar Amboora Preserved Lemon Sauce
3 tbsp mayonnaise
2 tbsp olive oil
3 shallots, finely chopped
1 tbsp capers
Bunch of fresh parsley, roughly chopped
Salt and pepper
- Boil the potatoes in salted water until they are just cooked and fork tender, about 15 – 20 mins. Drain and allow to cool slightly.
- Meanwhile, make the dressing. Combine the preserved lemon sauce, mayonnaise and olive oil and season to taste.
- Add the still slightly warm potatoes, shallots, capers and half the parsley to a large bowl and spoon in the dressing. Combine thoroughly until the dressing coats everything.
- Sprinkle over the remaining parsley and get stuck in! Best served warm.
