Lemony Potato Salad

Lemony Potato Salad

800g new potatoes

½ jar Amboora Preserved Lemon Sauce

3 tbsp mayonnaise

2 tbsp olive oil

3 shallots, finely chopped

1 tbsp capers

Bunch of fresh parsley, roughly chopped

Salt and pepper


  1. Boil the potatoes in salted water until they are just cooked and fork tender, about 15 – 20 mins. Drain and allow to cool slightly.
  2. Meanwhile, make the dressing. Combine the preserved lemon sauce, mayonnaise and olive oil and season to taste.
  3. Add the still slightly warm potatoes, shallots, capers and half the parsley to a large bowl and spoon in the dressing. Combine thoroughly until the dressing coats everything.
  4. Sprinkle over the remaining parsley and get stuck in! Best served warm.
