Quick and easy Shakshuka
Shakshuka is a North African and Middle Eastern classic — eggs poached in a richly spiced, vibrant tomato sauce that is as comforting as it is flavourful. Using Amboora's Moroccan Shakshuka Sauce, this version is incredibly quick and easy, ready in just 20 minutes. Perfect for a lazy weekend brunch or a simple midweek supper, served straight from the pan with crusty bread for dipping.

Ingredients:
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
1 red chilli, finely chopped optional
1 jar Amboora Shakshuka Sauce
4 eggs
a handful of fresh basil or coriander
Method:
- Heat some olive oil in a large pan and add the onion. Fry gently over a low heat until softened. Add the garlic and chilli and cook for a further few minutes.
- Add the Shakshuka sauce and allow to simmer for 5 mins. Make 4 dips in the sauce and crack in the eggs. Cover with a lid and cook for 6-8 mins, depending on desired result of the egg. Cook for less time for a runny yolk.
- Sprinkle over some chopped fresh basil or coriander season to taste and serve with crusty bread.
