Aubergine and Courgette Stew
Serves- 4
Prep time- 5 mins
Cooking time- 40 mins
Ingredients:
Olive oil
3 aubergines, cubed
2 courgettes, chopped
2 red onions, sliced
2 cloves garlic, finely chopped
2 tsp cumin
1 jar Amboora Shakshuka Sauce
Fresh mint, chopped
Feta
Method
1. Heat a glug of olive oil in a frying pan. Add the chopped aubergine, courgette and onion and sautee until softened. Add the garlic and cook for a further few minutes.
2. Add the cumin and coat the vegetables. Add the shakshuka sauce, turn down to a low heat and simmer for 30 mins. Season to taste.
2. Serve with couscous and sprinkle over the crumbled feta and fresh mint.
