Aubergine and Courgette Stew

 

This hearty Moroccan-inspired aubergine and courgette stew is a wonderfully comforting vegetarian dish, simmered in a rich, smoky tomato sauce. Using Amboora's Shakshuka Sauce as the base, it comes together in one pan with minimal effort — perfect for a flavourful weeknight dinner. Finish with crumbled feta and fresh mint for a fresh, tangy contrast.

Serves: 4

Cook time: 40 mins

Ingredients:

2 tbsp olive oil

3 aubergines, cubed

2 courgettes, chopped

2 red onions, sliced

2 cloves garlic, finely chopped

2 tsp cumin

1 jar Amboora Shakshuka Sauce

a handful of fresh mint, chopped

100g feta, crumbled

Method

1. Heat a glug of olive oil in a frying pan. Add the chopped aubergine, courgette and onion and sauté until softened. Add the garlic and cook for a further few minutes.

2. Add the cumin and coat the vegetables. Add the shakshuka sauce, turn down to a low heat and simmer for 30 mins. Season to taste.

3. Serve with couscous and sprinkle over the crumbled feta and fresh mint.
