Preserved lemon is one of Moroccan cooking's most distinctive ingredients — that deep, tangy, slightly floral flavour that you can't quite replicate with fresh lemon. This sauce brings it centre stage, balanced with turmeric, ginger and coriander into something bright, aromatic and completely authentic.
Pour it over chicken, fish or vegetables, simmer for 20 minutes and you have a proper Moroccan tagine on the table.
